Anyone who has watched a sheepdog work knows the dog spends most of its time in the wrong place on purpose, swinging wide to come in from behind. The rest was asking what makes that harder in a pleasant way.
Get behind them and walk up
Position Bess well and a dozen sheep walk up the hill together. Push too hard and one breaks for the open moor and is gone.
Walls and gates
From day three dry-stone walls cross the field with gates in them. Tap one open and route the flock through. Open the wrong one and you will be chasing them back down.

Swaledale and Herdwick from day one, then Suffolk, Jacob, Blackface, Cheviot and the broad, pink-nosed Texel. Every sheep penned is counted.
